SKILLS 101
The Vegan Kitchen

this page last updated 12/12/17

There are only a few skill needed to be a good cook. Here is a start:

Washing Fruits and Vegetables - Wash produce well with a commercial veggie wash, vinagar and water.

Knife Skills - You should make it a goal to obtain a good paring knife 3" or 4" blade and a chefs knife of 10" or so. If they are not new make sure they are sharp. Working with dull knives is harder and can be more dangerous.

Cutting board - I like the bamboo ones as long as you clean regularly with the hydrogen peroxide. A useful tool with your cutting board is called a bash n chop which is a flat scoop to move food you have cut up into the bowl or pan.

Cleaning - You can rid your kitchen of all cleaners except a spray bottle of 3% Hydrogen Peroxide (32 oz bottles at most food and drug stores are $1.00 and Walmart now sells it in smaller spray bottles in the drug section). It cleans like bleach but has no poisonous clorine. Clean sinks, counters, stove, cutting board regularly.

Storage - Use Pyrex glass containers or old jars washed well to store leftovers. Storing food in plastic or in contact with Aluminum should be avoided.
